When the celebrity chef’s restaurant was inspected, mold, spiders and mouse or rat droppings were found.
Now the pub is required to take immediate action, writes the news agency Siren.
“This does not apply inside the restaurant, but in a storage room where wine and dishwashing detergent are stored,” writes the chef in a message to Aftonbladet.
The celebrity chef has appeared in several television programs. His restaurant in Gothenburg was recently visited by the environmental administration, which checked routines for pests and the cleaning of premises, furnishings and equipment.
In the outdoor storage, poo from rats or mice and a broken trap were found. In its decision, the committee writes that the warehouse was “generally messy and really dirty” and that they assess that the warehouse is rarely cleaned.
Furthermore, they write that rats and mice can spread serious diseases to food which in turn can affect restaurant guests. The staff themselves must have said that they did not know that there was rat poo in the outdoor storage.
In the outdoor storage, according to the decision, there were also “cobwebs and spiders everywhere”, as well as dirt and mold on the ceiling, walls and floor.
The restaurant’s kitchen is also described as dirty. Among other things, there must have been a lot of food residue both on the floor under the sink and the dishwasher, as well as between refrigerators and workbenches.
The board considers the deficiencies to be serious and the restaurant must immediately remedy the problems and improve its routines for cleaning and pest control.
In a message to Aftonbladet, the star chef writes that they fixed the problems in the outdoor storage and that the restaurant was approved in a new inspection.
“This does not apply inside the restaurant, but to the storage area where wine and dishwashing detergent are stored. We closed for a day 2 weeks ago and emptied and cleaned it. Got approved the next day. Rats are a problem throughout the city in Gothenburg and Stockholm and we have hired consultants who check this regularly to prevent them,” writes the chef.
Regarding the deviations inside the kitchen, he writes that food residues can easily end up on the floor when washing dishes.
